Forage - Fromage - Ferment

As part of the Greenskills Sustainability Festival 2017, we are delighted to offer you the opportunity to join a small group for a foraging tour of our organic gardens.  Led by Murray Gomm, chief tractor driver/garden guru, you will explore what's in season and learn about organic gardening.  Following the tour you can choose one of three interactive sessions led by local producers and artisans to learn about their craft.  Lunch featuring local produce in the form of a ploughman's plate will then be offered if you select this option at the time of booking.  $75 for tour, session and lunch or $55 without lunch.

The three choices of interactive sessions are:

1.  Fromage:  Hear about the intricacies of artisanal cheese making and taste the resulting products from a local, award-winning cheesemaker Nic Selensaw of Porongurup Pure Cheese.

2.  Fermented Food:  Learn about the benefits and practicalities of making some of the time-honoured, traditional fermented food products such as kim-chee and kefir, from Mandy Hodgson from Denmark Harvest and enjoy a tasting of these health enhancing foods.

3.  Fermented Beverage:   Join Stuart Douglass from Denmark Heritage Cider Co as he takes you on a fascinating virtual journey on the production of the ancient beverage cider.  Hear about his rare varieties and their different contribution to the flavours of real cider.  A tasting of of ciders will be included, naturally!
